Make the glaze:
- Combine the molasses, bourbon and mustard in a small bowl. Season the pork chops with salt and black pepper, then brush with half the bourbon mixture. Preheat broiler on high.
Sear the pork chops:
- In a cast iron skillet, heat ½ tablespoon of the olive oil over medium-high heat. Add the pork chops and cook until 2 to 3 minutes per side, until pork chops are golden brown. Transfer the pork chops to a plate.
Cook the beans:
- Add the remaining olive oil to the skillet. Add the baby bell pepper, green onion and garlic. Cook, over medium heat, for 3 minutes, until the vegetables start to soften..
- Add great northern beans, paprika, thyme salt, and pepper to taste. Saute for 2 minutes stirring occasionally.
Glaze the pork:
- Place pork chops on top of the bean mixture and pour in any accumulated juice over pork. Brush the chops with the remaining glaze.
- Place the skillet under the broiler. Broil 2 to 5 minutes, until an instant-read thermometer inserted into a pork chop registers 160°F.
- Let pork rest 5 minutes before serving
