This recipe for Pork Chops with Apples and Onions is everything you want in an easy weeknight dinner. This delicious pan-seared pork chops recipe is made in a skillet with tender pork chops, fresh apples, savory herbs, and onions simmered in a dijon sauce.

Bone-in pork chops: approximately 4 pork chops
Salt and black pepper: to season the chops
Olive oil: to saute the pork
Apples: I prefer honey crisp apples which are sweet and crisp.
Onions: I used red onions but feel free to use a sweet onion (vidalia) or yellow onions as well.
Maple syrup: adds a little sweet to to the sauce, feel free to use honey or brown sugar in its place if desired.
Fresh rosemary and sage: fresh herbs add a lot of flavor.

- Season both sides of the pork chops with salt and pepper. Heat 1 tablespoon oil in large skillet over medium-high heat.
- Place pork chops to the hot pan and sear 4 minutes on each side, until golden brown. Transfer pork chops to a plate and set aside
- In a small bowl, combine the chicken broth, half and half, maple syrup, and dijon mustard. Set aside.
- Add the remaining tablespoon of oil to the skillet. Add the apples and onions to the hot oil and saute for 5 minutes, until apples and onions have softened. Season with salt, pepper, rosemary and sage.
- Pour chicken broth into skillet and bring to a boil. Reduce heat and simmer sauce for 3 minutes. Return pork chops back into the pan, nestling between the onions and apples. Simmer 4 minutes, until pork chops are cooked through (internal temperature of 145 degrees F) and stock has reduced by half.

Refrigerate: store leftovers in an airtight container in the fridge up to 5 days.
Reheat: reheat on the stove over medium heat with a tiny bit of apple juice until warm.
