- Heat a cast iron skillet over medium high heat until hot.
- Place 1 tablespoon of the ghee in the skillet to melt.
- Once hot, place the pork chops in the skillet and sear for 2 minutes on each side. Remove from heat.
- Add the remaining ghee, crushed garlic, and thyme to the skillet and transfer to the oven.
- Roast in the oven for 12 minutes, or until the pork chop reaches a temperature of 145 degrees.
- Spoon 1 teaspoon of sauce over pork to serve.
- Allow pork chops to rest for 3 minutes before serving.
