These cocktail sausages are made with little smokies that are stuffed with a cheese spread and wrapped in a cheesy fat head dough. Cheese spread - I used a pub cheese spread, you can find these in grocery stores in the cheese section. I especially like the pub cheese you can find at Trader Joe markets.
Part-skim mozzarella cheese
Onion powder
Large eggs
🔪 How to make Keto Pastry Wrapped Cocktail Franks
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- Remove franks from package and cut a slit partway down the center of the cocktail frank. Place about 1 teaspoon cheese spread in center of cocktail frank. Repeat with all franks. Set aside.
- In a large microwave safe bowl, heat mozzarella cheese and cream cheese for 1 minute. Remove from the microwave and stir the cheese mixture. Return cheese mixture to the microwave and cook it for about 30-45 seconds longer. Remove from microwave and stir until cheese is combined.
- In a small bowl combine almond flour, onion powder, and garlic powder.
- Add the eggs, the almond flour mixture and salt to the melted cheeses. Stir the dough mixture well until all ingredients are well combined and looks like a well formed pliable dough ball.
- Cut the roll of keto dough in half and roll ½ of the dough out onto a board floured lightly with almond flour. Cut dough into ½ inch thick strips. If dough sticks to the board, roll the dough strip with your hands and it will come back together. Wrap dough around each frank and place on baking sheet.
- Bake for 20 minutes in preheated oven or until dough is golden brown. Remove from oven and let cool for 10 minutes before transferring to serving platter. Makes 42 cocktail franks.

Refrigerate: store any leftover cocktail franks in an airtight container in the fridge up to 4 days.
Freezer: to store unbaked keto pigs in a blanket recipe in the freezer, place cocktail franks wrapped in fathead dough on a parchment lined baking sheet in the freezer until frozen. Transfer to an airtight storage bag and keep in the freezer up to 3 months.
To bake from frozen: place low carb pigs in a blanket on a parchment lined baking sheet and bake 25 minutes or until dough is golden brown.

- Knead the dough until all ingredients are well combined and you have a uniform, smooth texture. This helps avoid a crumbly or uneven dough.
- Roll out your dough between two sheets of parchment paper to prevent it from sticking to the rolling pin or countertop.
- If desired, coat the dough with an egg wash before baking and sprinkle with sesame seeds or everything bagel seasoning.
