Filet mignon steaks: for this recipe, steaks should be at least 1-½ inches thick (thickness of steak will affect cook times)
Olive oil: used to lightly coat the baby potatoes (if making) and the steak
Coarse salt: use a coarse kosher salt which has bigger flakes
Fresh cracked black pepper: fresh cracked is best and adds great flavor, set the grinder to a coarse setting to allow for bigger pieces of pepper
Dried thyme: used to season the steaks
Dried or fresh parsley: used as a garnish
Butter: an option garnish for the top of the steak
Baby potatoes: a suggested side dish made with the steak.
🔪 Instructions
- Pull steaks out of fridge 20 minutes before cook time to bring to room temperature.
- Preheat the air fryer to 400°f
- While the steaks are being brought to room temperature, prepare the baby potatoes.
- Place halved baby potatoes in a medium bowl. Drizzle with 1 tablespoon of oil and season with salt and pepper. Toss to coat. Place potatoes in air fryer basket and air fry at 400°f for 15 minutes, until soft enough to pierce with a fork. Remove from air fryer and keep warm.
- Drizzle steaks with oil and rub over the steak to coat completely. Season filets with salt, pepper, and thyme on all sides, pressing into the steak to adhere spices.
- Place steak in a pan the fits the air fryer basket. Cook at 400° for 10-15 minutes until desired temp is reached using an instant-read meat thermometer.
- Remove steaks once they’ve reached desired temperature. Place steak on a plate and vent with foil.
- Let steaks rest for 10 minutes before cutting.
- Top with a pat of butter (if using) to melt over the steaks for extra flavor and garnish with parsley (if using)

Air Fryer Cooking Times for Steak
Not everyone likes the same level of doneness for steak and because of that cooking time will vary. Below is a guide to use for filets that are 1-½ inches thick if you use a thicker cut of meat the cooking times will be longer.
For best results, when checking temperature use a meat thermometer and remove the steaks 5 degrees before they hit the desired temperature as they will continue to cook as they rest.
- Rare: 10-12 minutes (120 degrees F)
- Medium rare: 11-13 minutes (130 degrees F)
- Medium: 12-14 minutes (140 degrees F)
- Medium well: 13-15 minutes (150 degrees F)
- Well done: 14-16 minutes (160 degrees F)
Keep in mind that the more the steaks are cooked the tougher they will be. It is not recommended to cook past medium with a tender cut.

Store any leftover steak in an airtight container in the fridge up to 4 days.

- Make a dry rub with the salt, pepper, and thyme by mixing in a half teaspoon each of garlic powder and onion powder.
- Substitute your favorite steak seasoning for the seasoning ingredients.
