Sharp Cheddar cheese

🔪 Instructions
- Preheat oven to 350 degrees. Spray 9 inch round casserole dish with nonstick cooking spray and set aside
- In a large skillet over medium-high heat, brown ground beef with minced garlic, and diced onions until meat is browned and onions are translucent. Drain excess fat from ground beef mixture and discard.
- In a large bowl combine refrigerated hash brown potatoes, eggs, light cream, 1 cup of cheddar cheese, chili powder, cumin powder, salt and pepper. Stir until well combined. Add ground beef and stir to combine.
- Transfer potato mixture into prepared baking dish. Using the back of a spoon, pat mixture down into dish until compact.
- Bake in preheated oven for 60 minutes. Remove from oven and place remaining ½ cup cheese and sliced tomatoes on top of the casserole. Bake another 15 minutes, until cheese has melted.
- Serve topped with sour cream and sliced green onions
