Apples: good ones to use would be cortland or granny smith apples
All purpose flour
Milk
Large egg

🔪 Instructions
- Preheat the oven to 350 degrees. Lightly spray a 9-inch round baking pan with cooking spray.
- In a small bowl, mix the walnuts, sugar, and ¼ teaspoon cinnamon. Set aside.
- In a medium bowl, using a hand mixer, combine the milk, egg, maple syrup, and vanilla extract. Stir in the grated apple.
- In another large bowl, sift together the flour, baking powder, baking soda, remaining cinnamon, salt, and nutmeg. Add flour mixture to apple mixture and stir gently just until combined.
- Transfer the batter into prepared pan, spreading evenly. Sprinkle with the pecan mixture.
- Bake for 30 minutes, or until toothpick inserted in center of cake comes out clean. Transfer the pan to a wire rack and cool slightly.

📖 Variations
- Substitute white whole wheat flour for the all purpose flour.
- Use pecans in place of walnuts.
- An equal amount of brown sugar can be substituted for the maple syrup.
💭 Tips
- For a precise sized parchment round to line the baking pan, place pan on parchment then trace around the bottom of the pan with a pencil. Cut the circle on the inside of the pencil mark. The parchment round will fit perfectly into the baking dish.
- If chopping your own walnuts, use about 1-½ cup walnut halves to equal 1 cup chopped walnuts.
