Slider rolls bring this stuffed french toast recipe to a whole new level making it a perfect brunch recipe for Mother's Day and other special occasions.
I took the regular french toast concept and spread cheesecake filling between slider rolls and a new favorite was born. They came out as perfect little sweet cheese filled rounds of vanilla cinnamon battered deliciousness! Topped with some fresh blueberries and strawberries and drizzled with some pure maple syrup!

Easy recipe: this recipe is so easy, just spread the cream cheese filling on the inside of the slider rolls, flatten, dip, and cook!
Special occasions: easy enough for any time but special enough to be a gourmet breakfast for those special occasions brunches.
Versatile and fun: not only are these a fun take on regular french toast, this recipe can easilly be adapted to your own flavor combinations.

Slider rolls: I used Martin's Potato Slider Rolls
Cream cheese
Confectioners sugar
Large eggs
Ground cinnamon
vanilla extract
Half and half
Cooking spray
Maple syrup
Fresh blueberries
Fresh strawberries
đŞÂ How To Make Cheesecake Stuffed French Toast
- In a large shallow bowl, whisk together egg, cinnamon, vanilla, and half and half. Set aside.
- In a medium bowl, using a hand mixer, mix together the cream cheese, confectioner's sugar, and vanilla extract until creamy.
- Spread 1 tablespoon cream cheese mixture on bottom half of each slider roll. Cover with top of bun and press with the palm of our hand to flatten the slider roll.
- Repeat with remaining rolls.
- Heat large skillet over medium heat until hot. When skillet is hot, spray with cooking spray if needed.
- Dip stuffed french toast in egg mixture and place in hot skillet. Cook until golden brown on each side pressing bun slightly with when cooking.
- Serve with fresh fruit and maple syrup.

Refrigerate: store leftovers in an airtight container in the fridge up to 3 days.
To reheat: warm cheesecake stuffed french toast sliders in the microwave or toaster oven until heated through.

Strawberry cheesecake stuffed french toast: add ½ cup chopped strawberries to the cream cheese mixture then spread strawberry cheesecake filling inside of the slider rolls and drizzle cooked french toast with a strawberry glaze.
Citrus twist: toss the fresh berries with a squeeze of lemon juice and lemon zest to brighten the berry flavor.
Boozy splash: toss fresh berries with a splash of Grand Mariner for an orange flavor.
Apple Cinnamon: use brown sugar in the cheesecake mixture and top sliders with a tablespoon or two of Mom's Apple Pie Filling, a dollop of whipped cream and dash of cinnamon.
French toast casserole: arrange the stuffed french toast sliders in a large baking dish. Cover egg mixture, and bake at 350 for 25-30 minutes.

Use bread instead: Use brioche bread, cut a few thick slices of bread in quarters and make mini stuffed french toast sliders.
Room temperature ingredients: be sure to use softened cream cheese to make blending the ingredients together easier;.
Soak the Sliders: Allow the sliders to soak in the egg batter for a few moments to ensure they're thoroughly coated and infused with flavor.
Cooking Temperature: Use a medium-low heat to cook the sliders, allowing the cheesecake filling to warm through without burning the exterior.
