Carrots: I like to thinly slice the carrot to give it lots of little orange color bursts.
Portobello mushrooms: I use portobello because they are meaty, you can also use crimini mushrooms.
Black pepper and salt (to taste)
Dried thyme leaves
Garlic cloves

Chicken stock: if desired, choose a chicken bone broth like kettle fire bone broth.
Cooked chicken: this is a great way to use leftover air fryer rotisserie chicken, or any leftover roasted chicken breasts or chicken thighs (skinless).
Shirataki noodles (keto-friendly noodles found in the same section you find tofu in the grocery store or buy them on amazon.

Prep time: 10 mins Cook time: 35 mins Total time: 45 mins Yield: 6 servings Serving size: 1-½ cups
- In a large pot melt butter over medium high heat. When bubbly add carrots, celery, mushrooms, salt, pepper, parsley, garlic, and thyme.
- Cook 2-3 minutes stirring frequently until mushrooms release their water and have softened.
- Turn heat down to low and cover vegetable mixture with lid. Simmer 5 minutes.
- Add the diced or shredded chicken and chicken broth. Bring to a soup mixture to a boil then turn heat down to simmer for10 minutes.
- While soup is simmering, remove noodles from package and place in colander. Rinse noodles under water for 2 to 3 minutes, making sure to rinse and drain well.
- Add shirataki noodles to soup and simmer another 5 minutes.
- Serve as desired.

🙂 Jill, that's why I opt to not cook them in the soup itself. Grumpy also says I am not to ever bring the soup to a boil, to slowly heat it up. HA HA, he's a soup expert I guess, he lived on soup and boxed macaroni and cheese. lol
