Buffalo Chicken Baseballs are made with buttery crescent rolls wrapped around a creamy buffalo chicken filling and baked until golden brown. They make a great dinner option for busy weeknight and the whole family loves them!

🥘 Ingredients
Leftover chicken: I like to use leftover rotisserie chicken that I've made myself, but you can also buy it from the grocery store.
Crescent roll dough: I only use Pillsbury, there is a difference in quality in my opinion and these work best.
Reduced fat cream cheese: also called ⅓ less fat cream cheese, I recommend Philadelphia brand.
Hot sauce: Your favorite hot sauce will work. I have used Red Hot and Texas Pete. Both are good.
Cilantro: this is optional, if you are adverse to cilantro, just leave it out.
Worcestershire sauce: just a little bit to enhance the flavor of the filling.
Milk: you need just enough milk to loosen the filling up a little bit.
🔪 Instructions
- In a large mixing bowl, using a hand mixer on medium speed, mix together the hot sauce and cream cheese together until creamy.
- Add worcestershire sauce and milk. Once incorporated stir in chopped chicken and cilantro (if using). Set aside.
- Open can of crescent rolls and separate the four rectangles from each other. Do not separate the rectangles into the triangles.
- Using a rolling pin, roll out one of the rectangles to flatten and stretch it out more, pinching seams together to prevent holes as you roll.
- Place ½ cup chicken mixture in the center of dough and then pull opposite corners over the filling and pinch together to seal.
- Place on parchment lined cookie sheet and sprinkle with breadcrumbs. Repeat with remaining 3 sections of dough.
- Bake at 350 for 25 minutes, or until golden brown.
🥄 Equipment
Baking sheet: if using a cookie sheet, line it with parchment paper. I used a baking stone and did not need parchment paper.
Large bowl: to mix the filling
Rolling pin: to roll out the crescent dough
Measuring cups: you will use the ½ cup measure to scoop the filling onto the dough.
🥫Storage
Refrigerate: store any leftover buffalo chicken baseballs in the fridge in an airtight container up to 4 days.
Reheat: reheat in a 300 degree oven for 10 minutes or in the microwave until warmed through.
📖 Variations
- Use a reduced fat crescent roll for a lower fat and calorie version
- Stir 1 cup shredded cheddar cheese into the cream cheese filling
- Add 1 diced jalapeno for additional heat.
