My whole family loved this buffalo chicken quinoa bowl! The creamy dressing that coats the chicken has great buffalo hot sauce tamed down with the ranch dressing and is combined fresh crisp veggies to make an easy weeknight dinner.

Cooked chicken, you can use chicken breast or chicken thighs. I like to use grilled chicken.

🔪 Instructions
- Cook the quinoa according to package instructions.
- In a large bowl, toss together the cooked chicken, buffalo sauce, and ranch dressing to coat well.
- Place 1 cup of lettuce in the bottom of 4 large shallow bowl.
- Top the lettuce with 1 cup of cooked quinoa, the buffalo chicken mixture, cherry tomatoes, diced cucumbers, blue cheese crumbles, and garnish with green onion slices.

- Substitute greek yogurt for the ranch dressing to reduce fat.
