Non-fat greek yogurt: used to cut the mayo in half making lower fat dressing.
Mayonnaise: if desired, you can use reduced fat mayo, however, I find it sweeter than regular mayo and prefer to use full fat in lesser amounts.
Blue cheese
Flank steak: this is my favorite lean cut of beef, feel free to use your favorite cut of beef, keeping in mind the fat content will change if you choose a fattier cut of meat.
Salt
Black pepper
Fresh spinach
Fresh tomatoes
Whole wheat sandwich rolls
Yellow Onion
Brown sugar: this is optional, it adds a deeper flavor to the caramelized onions.
Butter spray: used I Can't Believe it's Not Butter to spritz the whole wheat rolls for toasting (optional)
🔪 Instructions
- Place flank steak on a plate and season with salt and black pepper. Set aside.
- In a small bowl, mix together the yogurt, mayonnaise, and blue cheese. Set aside.
- Spray a large cast iron skillet with cooking spray and heat over medium-high heat until hot. Add onions and turn down heat to medium. Cook for 2-3 minutes, until onions begin to wilt.
- Turn heat down to medium-low and cook for 20 minutes, until onions have a translucent caramelized color. Add brown sugar to sauteed onions (if using) and pepper to taste. Transfer onions to a small bowl and set aside.
- Wipe cast iron skillet clean and heat over medium-high heat until hot. Place seasoned steak in hot skillet and turn heat down to medium. Cook steak 7 minutes per side or until desired doneness.
- Transfer cooked steak from skillet to a cutting board and tent with foil. Let rest 5 minutes before slicing.
- Spray whole wheat roll on cut sides with butter spray and toast bun in skillet.
- Slice rested steak into thin slices. Layer on bottom toasted bun as follows: spinach, tomato, beef slices, caramelized onions, blue cheese dressing, toasted roll top.

Large skillet: I recommend using a cast iron skillet as it holds heat evenly and is important for cooking the steak perfectly.

Store leftover steak and toppings in separate airtight container up to 4 days.
📖 Variations
- Use different cheeses in place of the blue cheese, ones that would work would be feta cheese or gorgonzola, any cheese that will crumble.
- Cook sliced green bell peppers with the onions for a more traditional pepper and onion topping.
💭 Tips
- Grill the flank steak instead of cooking it in the cast iron skillet, this will give the cheesesteak another level of flavor.
- Tent foil over the steak on the cutting board and allow it to rest for at least 5 minutes to keep the juices inside keeping flavor in.
- A hearty whole wheat roll is best for these type of sandwiches. The juice from the meat can tend to make the sandwich soggy and difficult to eat if you don't have a good roll. The spinach on the bottom of the bun also helps prevent the roll from getting too soggy.
- If you are not sure what cuts of meat are lean, check with your local butcher and see what they recommend.

Healthier Cheesesteak Sandwich

Ingredients
- 2 tablespoons non-fat greek yogurt
- 2 tablespoons mayonnaise
- ¼ cup blue cheese , crumbled
- 1 pound flank steak
- salt and pepper to taste
- 2 cups spinach
- 1 tomatoes , sliced
- 4 whole wheat sandwich rolls
- 4 medium yellow onions , sliced
- cooking spray
- 1 teaspoon brown sugar , (optional)
Instructions
- Combine the yogurt, mayonnaise, and blue cheese. Set aside.
- To make caramelized onions, spray a hot skillet with cooking spray. Add onions and cook over medium low heat. Cook until onions have a translucent caramelized color, about 20 minutes. Add brown sugar and pepper to taste.
- Heat a cast iron skillet until hot. Season flank steak with salt and pepper. Place steak in hot skillet and turn heat down to medium. Cook 7-8 minutes per side or until desired doneness. Remove from skillet onto a cutting board and tent with foil. Let sit at least 5 minutes before slicing.
- Toast bun in skillet if desired, slice steak into thin slices. Layer sandwich as follows: spinach, tomato, beef slices, caramelized onions, blue cheese dressing.
