One of my favorite potluck recipes is this Buffalo Chicken Pasta Salad. The tang and bite of Frank's Red Hot Sauce come through with the tender pasta and its the perfect side dish for memorial day, July 4th, or your next summer cookout.

🥘 Ingredients
Spiral pasta (aka Rotini): I like to use the spiral pasta because it catches the flavors in the spirals.
Celery
Roasted red pepper
Cooked chicken: this is a good recipe to use up any chicken leftovers you may have.
Frank's Red Hot Sauce: Frank's is my preferred brand, but feel free to use your own favorite spicy sauce here.
Roasted Red Pepper Brine (the juice the peppers are in)
Blue cheese crumbles: I love blue cheese sauce with my hot wings, especially the chunky type.
🔪 Instructions
- In a large pot, over medium-high heat, cook pasta according to package directions until al dente. Rinse in cold water and set aside to allow to come to room temperature.
- In a small bowl, combine the mayonnaise, hot sauce Worcestershire sauce, roasted red pepper brine, and blue cheese crumbles.
- In a large bowl, toss together the cooked pasta, celery, onion, roasted red pepper, and chicken in.
- Pour the salad dressing over top of the pasta mixture and stir to combine.
- Refrigerate up to 2 hours before serving.

Refrigerate: store leftover buffalo pasta salad in an airtight container up to 4 days.
Freezing is not recommended.
📖 Variations
- Red onion can be substituted for the green onions.
- Greek yogurt can be substituted for the mayonnaise.
- If you are not a fan of blue cheese, substitute diced mozzarella cheese in it's place
- Fresh red bell pepper can be used in place of the roasted red pepper.
- If not using roasted red bell peppers, substitute milk or water for the red pepper brine. (this is to thin the dressing out some)
💭 Tips
- This is a good salad to make the day before you plan to eat it as the longer it sits, the more the flavors will blend.

Buffalo Chicken Pasta Salad
