Champagne Marinated Shrimp and Fruit Salad is a delicious way to ring in the New Year! The Champagne Dressing has a citrus background with a slight touch of sweet heat that compliments both the shrimp and fruit salad.

🥘 Ingredients
Champagne: you can buy a very inexpensive brand such as Brut. Champagne is often used as a celebratory beverage. Here it is used as part of the marinade.
Orange and Lemon juice and zest: oranges are commonly used as gifts by the Chinese in the new year as it symbolizes wealth and good fortune.
Mango: mangos are a symbol of abundance.
Pomegranate: in Greek tradition, pomegranate is tossed against the front door when the clock strikes midnight on New Year’s Eve. The more seeds fall out, the more luck and fertility that household will be blessed with
Green grapes: In Spain, it is believed that eating twelve grapes at midnight as the clock strikes, one grape for each hour will bring you luck for the 12 months ahead
Honey or Truvia Nectar: adds a little bit of sweetness to the salad.
Salt: accents the flavors.
Crushed Red Pepper: this is optional and will add a slight hint of heat to the salad.
Shrimp: buy large shrimp that has already been cooked, peeled and deveined. Leave the tails so you have something to hold on to when eating the shrimp.
🔪 Instructions
- In a medium bowl, mix the mango, pomegranate seeds, sliced grapes and whole grapes. Set aside.
- In a 2 cup measuring glass, whisk together the champagne, lemon juice, orange juice, zest, honey, olive oil, salt, and red pepper flakes.
- Place shrimp in a large glass bowl. Pour ½ cup marinade over the shrimp.
- Pour remaining marinade over the fruit and toss. Add a pinch or 2 of salt to taste. Allow to sit and marinate for at least ½ hour.
- With a slotted spoon divide ½ of the fruit into 2 shallow champagne glasses. Place one shrimp on top and 5 around the rim of the glass.

Medium bowl
2 cup measuring glass
Citrus reamer: used to juice the orange and lemon.
Strainer: used to strain the pulp and seeds from the citrus fruit.
Microplane zester: to remove the zest from the citrus fruits.
Hand whisk or bullet blender: to emulsify the citrus marinade.
🥫Storage
Refrigerate: store fruit salad in an airtight container in the fridge up to 4 days. Shrimp can be stored in a separate airtight container up to 3 days.
📖 Variations
- Substitute any of your favorite fruits for the salad. You could use strawberries, blackberries, red grapes, orange slices and more.
💭 Top Tips
- To prepare the mango, stand it on its end with the stem side down. With a sharp knife cut from the top of the mango, down one side of the pit. Repeat with the other side. With each half, make lengthwise and crosswise cuts in it, but try not to cut through the peel. Bend the mango halves use a paring knife to cut the pieces away from the peel.
- To remove the pomegranate arils: score into the skin up to the flower end on both sides, allowing you to twist and break the fruit in half. Over a bowl of water, break pomegranate into quarters. Pull out the seeds with your hands under the water to prevent juice from squirting all over your surface. The seeds will fall to the bottom while the white pith floats to the top. Use a small strainer, remove the pith, and drain the water leaving you with only the pomegranate seeds!

Ingredients
For the Dressing:
- ½ cup Brut sparkling wine
- ½ lemon , juiced and zested
- 1 mandarin orange , juiced and zested
- 1½ tablespoon honey
