Keto Cabbage Rolls are an updated version of mom's stuffed cabbage rolls made with ground beef and cauliflower rice. They are a delicious casserole recipe almost like mom's but still just as delicious and comforting.
This cabbage rolls recipe is pure comfort food without the carbs. It is a healthy low carb recipe that is perfect whether you are following a low carb keto diet or not.

Cabbage Rolls bring back childhood memories and a lot of comfort. Everytime I would make cabbage rolls on my own I would remember Mom making them at home for our family. This on it's own would bring me comfort and warmth!

🥘 Ingredients
Extra virgin olive oil
1 head cauliflower, diced into tiny pieces, this takes the place of rice in the recipe.
Onion, garlic cloves, and green bell pepper are added for flavor.
80/20 ground beef, a leaner beef can be used if desired.
Cheddar cheese and eggs to add flavor and bind the meat mixture.
1 head cabbage to wrap the meat filling.
Tomato sauce and Italian seasoning.
🔪 Instructions
- Preheat oven to 350 degrees F. Set aside a large glass baking dish coated with cooking spray.
- In a large skillet over medium heat, heat the olive oil until it shimmers. Add the cauliflower, onion, garlic, and bell pepper. Cook for 10 minutes, stirring occasionally, until softened. Let cool for 15 minutes.
- In a large bowl, combine the ground beef, cauliflower mixture, cheddar cheese, and egg.
- In a small bowl, combine the Italian seasoning and tomato sauce. Set aside.
To assemble cabbage rolls:
- Place 1 cabbage leaf flat on a hard work surface Place ⅓ cup of meat mixture in the center of the cabbage leaf. Starting from the bottom edge of the cabbage leaf, roll the cabbage up and over the meat mixture. Fold in each side of the leaf and continue rolling to enclose the meat.
- Place the cabbage roll seam side down in the baking dish. Repeat with remaining cabbage leaves and meat mixture.
- Pour the remaining tomato sauce evenly over the cabbage rolls and bake for 1 hour.

Store any leftover cabbage rolls in an airtight container in the fridge up to 4 days or in the freezer up to 3 months.
📖 Variations
- Substitute a low carb pasta sauce for the tomato sauce and Italian seasoning.
- Use a mixture of ground beef and ground pork or use ground chicken or turkey in place of the beef.
💭 Tips
- Steaming the whole head of cabbage for a just few minutes softens the cabbage leaves enough to make them easy to remove from the head as well as keep them sturdy enough for rolling.

Hi Minaz, I used a prepared sauce I bought at the grocery. Rao's is an excellent brand for a sauce. I'm pretty sure you could google low carb pasta sauce recipes on the internet and find one also. Unfortunately, at this point in time, I don't have one on my blog. Thanks for bringing this up as I now will attempt to create a recipe for the blog!

We at home make the Lebanese version of stuffed cabbage rolls, but never thought of using rice cauliflower instead of rice. That's genius! Low carb and still full of flavor!!
