Spelt flour: spelt flour is an ancient grain flour that can be used in place of all purpose flour.
Chunky peanut butter: I love the Smart Balance Crunchy Peanut butter in this recipe.
Maple syrup: when making these cookies I like to use pure amber maple syrup. However a darker syrup would also be delicious and lend a little more depth of flavor.
Vanilla extract: added to compliment the flavors
Vegan chocolate chips: if you aren't vegan, any feel free to use milk, semi sweet, or dark chocolate chips.
🔪 Instructions
- Preheat oven to 375°F. Line cookie sheet with parchment paper.
- Place peanut butter in a microwave-safe medium bowl and cover bowl with a paper towel.
- Heat peanut butter on high power for 30-45 seconds, or until the peanut butter is melted, stirring once or twice as it heats.
- In large bowl stir together spelt flour, baking soda, and salt.
- Wish the maple syrup and vanilla extract into the melted peanut butter. Stir until blended.
- Stir the wet ingredients into the dry ingredients, then fold in the chocolate chips.
- Using a large cookie scoop, drop cookie dough balls onto the prepared baking sheets. Flatten slightly.
- Bake 15 minutes, or until cookies are golden brown with crisp edges. Cool cookies 5 minutes on the cookie sheet.
- Transfer cookies to a wire rack and allow them to cool completely.
