- In a skillet over medium heat, add oil, onion, ground ginger, and garlic. Sauté for 3 minutes, until onions are translucent.
- Place potatoes and carrots in the onion mixture and sauté for 10 minutes, until soft.
- Add the remaining spices and peas to the potato mixture and sauté for 3 minutes. Set filling aside.
- Roll out the samosa pastry and divide it in half. Lightly dust a flat surface with cornstarch.
- Place ½ of the samosa dough on the cornstarch. Roll out until the dough is ⅛” thick. Repeat with remaining ½ of the dough.
- Using a 6” circle dough cutter, cut out 5 circles of dough. Set aside. Repeat with remaining dough.
- Cut a circle in half and a shape into a cone, wetting flat sides with water so they adhere together.
- Fill the cone with filling and pinch the cone shut. Repeat for all circles.
- Place filled veggie samosas on parchment paper inside the air fryer basket in a single layer, spray with oil and air fry samosas at 350°f for 6 minutes, flip samosa and spray with oil spray, then cook for 6 minutes.
