Warm water: temperature should be around 110°F/45°C
Whole oats
Pure maple syrup: should be at room temperature
Salt
Olive oil

- In a large mixing bowl, combine the boiling water and whole oats. Set aside for 1 hour.
- Add the maple syrup, yeast, and oil to the cooled oatmeal mixture and stir to combine.
- Add 3 cups of flour and salt. Stir to combine. The mixture will be a loose dough.
- Stir in remaining 2 cups of the flour until the dough takes shape.
- Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until the dough becomes smooth and elastic, adding more flour as needed to prevent sticky dough.
- Place dough in a lightly oiled bowl and cover it with a damp cloth or plastic wrap, and let dough rise in a warm place for 1 hour.
- Punch dough to release any air bubbles. Divide dough in half and shape it into 2 separate loaves.
- Place the shaped dough in a loaf pan lightly coated with cooking spray.
- Cover the pan with a cotton kitchen towel and let dough rise again for 1 hour (this is the second rise).
- Preheat oven to Bake the bread in the preheated oven for 30-35 minutes or until the top turns golden brown.
- Remove the bread from the oven and allow it to cool on a wire rack before slicing and serving.
