Made in the air fryer, Buffalo Shrimp Quesadillas are a quick and easy recipe for weeknight dinner or lunch when time is short and tummies are hungry! Juicy shrimp are coated in a buffalo sauce between tortillas cooked to crispy perfection!

🥘 Ingredients
Raw shrimp: I like to use small to medium sized shrimp, but jumbo shrimp can be used. If using jumbo shrimp, I recommend chopping it into smaller pieces.
Garlic and onion powder: used to season the shrimp before cooking.
Buffalo wing sauce: just enough to add buffalo flavor to the shrimp.
Flour tortillas: use your favorite low carb brand or make your own homemade flour tortillas.
Mozzarella cheese: is the glue that holds the shell together. I like to use part-skim mozzarella because it has less moisture than whole milk mozzarella
Blue cheese: because buffalo style anything needs this sharp bite with it!
Celery: this is also an optional ingredient. Chopped pieces can either be sprinkled in the quesadilla or it can be served on the side.
Cilantro: not required, but I love the combination of flavors.
🔪 Instructions
For the shrimp:
- Place 1 tablespoon butter in a large skillet over medium-high heat. Melt butter until bubbly.
- Add the shrimp to the hot butter and cook for 2 minutes. Turn shrimp over and cook for 2 minutes more.
- Transfer the shrimp from the skillet to a small bowl and set aside.Add the remaining butter and hot sauce to the skillet. Melt butter and stir to combine with the hot sauce.
- Remove the skillet from the burner and add the shrimp back to the hot sauce mixture. Toss to coat shrimp with buffalo sauce.
To make the quesadilla:
- Spread butter on 1 side of a large tortilla.
- Place tortilla, butter side down, on air fryer tray or basket. Add ingredient layers on half of each tortilla as follows: mozzarella cheese, buffalo shrimp, blue cheese, and cilantro (if using).
- Bring empty side of tortilla over top of the filling and press lightly. Cook for 3 minutes. Carefully flip quesadilla and cook 3 minutes longer, until tortilla is golden brown.
- Remove quesadilla from air fryer and allow to cool for 1 minute. Cut into wedges and serve.

Store leftovers in an airtight container in the fridge up to 3 days.
📖 Variations
- Use low carb tortillas in place of regular ones.
- Substitute pepper jack cheese for the mozzarella cheese.
- Garnish with the green parts of a scallion instead of the cilantro.
💭 Tips
- Have the skillet hot before assembling the quesadilla. I like to have the whole tortilla warming while I assemble so it is easy to fold over the half to cover the filling.
- Use a little extra mozzarella cheese to place on the top layer to help the quesadilla hold together better.
- No airfryer? No problem! Just grill these on a hot griddle on each side until golden brown.
