Ingredients
- 1 lb ground beef
- 1 tablespoon extra-virgin olive oil
- 1 medium yellow onion chopped
- 5 cloves garlic chopped
- 1 tablespoon kosher salt
- 1 tablespoon chili powder
- ½ tablespoon chipotle chili powder
- 1 teaspoon dried oregano
- 1 tablespoon tomato paste
- 1-½ cup beef broth
- 14.5 ounce whole peeled tomatoes with their juice
- 15.5 ounce kidney beans rinsed and drained
Instructions
- Heat the olive oil in a large stockpot over medium-high heat until hot. Add the ground beef and chop with a spoon to crumble.
- Cook the beef until it begins to brown. Add the onion and garlic. Cook for 3 minutes more, or until the onion has softened and the beef is browned.
- Stir in the chili powder, cumin powder, chipotle powder, oregano, salt, and pepper. Cook stirring occasionally for 2 minutes.
