Air Fryer Yellow Squash is an easy side dish recipe with incredible flavor. It is my favorite way to make yellow summer squash without heating up the kitchen.

🥘 Ingredients
Fresh Yellow squash: this comes in two different types, there is crookneck squash (yellow squash that makes a hook at the top and hasslightlyy bumpy skin),and yellow zucchini (shaped like green zucchini but yellow in color).
Paprika: you can use sweet or smoked paprika
Olive oil: adds flavor and helps the spices adhere to the squash
Garlic powder, black pepper, and salt: more of the spices that season the squash
Fresh parsley: to sprinkle garnish the squash recipe, you can substitute any of your favorite fresh herbs if desired.
🔪 Instructions
- Preheat air fryer to 400 degrees F.
- Place squash pieces in a large bowl and drizzle with olive oil.
- In a small bowl, combine paprika, garlic powder, salt, and pepper. Sprinkle over top of the squash and toss to coat.
- Place squash slices in the basket of your air fryer in a single layer, being careful to not place any on top of each other.
- Air fry for 15 minutes, or until squash is tender and is golden brown.

Store any leftover squash in an airtight container in the fridge up to 4 days.
📖 Variations
- Add ½ teaspoon onion powder and ½ teaspoon italian seasoning to the spice mixture.
- Use olive oil cooking spray in place of the oil.
- Sprinkle the top of the squash with some buttered toasted bread crumbs for added texture and flavor (no longer keto if you do this).
- Use green zucchini or pattypan squash in place of the yellow squash.
- Add a shake or two of soy sauce to the mixing bowl to add some deeper umami flavor.

Most summer squash have similar tastes and will work will to substitution in this recipe.
