🥘 Ingredients
Panko breadcrumbs: for the breading mixture
Large eggs: for the egg wash
Fresh zucchini: look for medium sized zucchini without blemishes
Italian seasoning: used to add flavor, can be omitted if seasoned breadcrumbs are purchased.
Parmesan cheese: added for flavor and to assist in crisping up the breading.
Salt, black,pepper, and garlic powder: to add flavor
Olive oil spray: to coat the air fryer trays and spritz the top of the zucchini fries.
🔪 Instructions
- Cut zucchini into 3x1"strips. Place on a paper towel lined baking sheet and sprinkle lightly with salt. Let sit for 10 minutes to allow excess moisture to escape.
- In a large mixing bowl, whisk the egg until foamy.
- In a shallow mixing bowl, combine the panko crumbs, Italian seasoning, black pepper, and garlic powder. Stir to combine.
- Toss the zucchini fries in the egg mixture. Using a slotted spoon, remove the zucchini from the egg mixture and place in the panko mixture. Toss to coat.
- Lay the breaded zucchini fries in a single layer on an air fryer tray or air fryer basket that has been sprayed with non-stick cooking spray. Leave space between each fry to allow hot air to circulate around the food.
- Place tray in air fryer and cook for at 400 degrees F for 7 minutes. Remove tray and turn zucchini fries over. Return to the air fryer for 5 minutes, until breading has become golden brown.

📖 Variations
- Substitute ground pork rinds or coarsely ground almond flour for a low carb version.
- Yellow squash can be used in place of zucchini.
💭 Tips
- Summer squash (yellow and green squash) is comprised of 95% water. For this reason it is important to try and extract moisture from the squash before cooking it to prevent any sogginess.
