Large egg yolks: separate the yolks from the whites and save the whites for another use. Whites can be frozen in the freezer up to 2 months.
Eggnog: you can use store bought or make this homemade creamy eggnog recipe.

- In a large bowl combine the flour, baking powder, and cinnamon.
- An another large bowl, using a hand mixer, mix the butter and sugar until creamy.
- Add egg yolks, eggnog, and vanilla to the butter mixture. Mix on medium speed until all ingredients are incorporated.
- Gradually add the dry ingredients to the wet ingredients. Mixing until completely incorporated.
- Line the air fryer basket with parchment paper and set aside.
- Using a small cookie scoop, form into dough balls and place it in the air fryer basket on top of the parchment paper, leaving space between each cookie to allow for spreading..
- Cook at 325°f for 6-8 minutes or until edges start to crisp and turn golden.
- Remove cookies from air fryer and cool completely on a wire rack.
