Rice or red wine vinegar, I prefer rice wine vinegar for the sweetness but red can be used.
Bell pepper: green, red, or yellow peppers can be used.
Jalapeno pepper: this is optional, but I love to add it for the flavor.
Red onion: added for flavor and color.
Fresh dill: added for an extra freshness in the salad.
Mayonnaise: I prefer full fat mayonnaise for the best flavor and go with either Hellmann's or Dukes Mayo (both are gluten-free).
Sour cream: this adds a freshness to the dressing that cuts the heaviness of mayo and makes this recipe out of this world. It also compliments the fresh dill.
Thick cut bacon: adds a smoky flavor and the crisp cooked meat and fat add texture.
Grape tomatoes: for topping the potato salad.
Freshly ground black pepper: adds the best flavor!
🔪 Instructions
- Place potatoes in a large pot and cover with water, adding 1 teaspoon of salt. Bring the potatoes to a boil over medium high heat and bring to a boil.
- Once boiling, reduce heat to medium low, and cook for 10 minutes, until potatoes are fork tender.
- Transfer cooked potatoes to a large bowl and cool completely before assembling salad.
- Toss vinegar with cooled, diced potatoes.
- Add bell peppers, jalapeno pepper, onion, and 5 slices of chopped bacon.
- Season with salt and pepper to taste and toss to combine. Set aside.
- In a small bowl whisk together mayonnaise, sour cream, and fresh dill.
- Pour the dressing over the potato mixture and stir to coat.
- Top with grape tomatoes, the remaining bacon, and fresh dill sprigs.
- Cover and refrigerate until serving.
