🥘 Ingredients
Haricots Verts: these are a long green bean, also known as simple french green beans and be found in the grocery store in the fresh produce section. Regular green beans can be used if you can't find Haricots Verts.
Unsalted butter: used to saute and add flavor
Shallot: these are similar to an onion but with a bolder flavor and are smaller.
Sturdy bread crumbs: use a firm bread such as ciabatta or a day old sweet dinner roll.
Thick cut bacon: use pre-cooked bacon that is cooked until crisp.
Salt and black pepper to taste

🔪 Instructions
- Rinse green beans and pat dry with paper towels to absorb any moisture remaining.
- In a large skillet, melt tablespoon butter over medium heat until bubbly. Add shallots and saute for 1 minute, stirring frequently
- Add string beans and saute for 7 minutes or until a fork easily pierces the bean.
- While beans are sauteing, add remaining butter to small skillet and melt over medium heat until bubbly. And breadcrumbs and toss to coat, cooking until lightly browned and crispy, stirring often. Remove from heat.
- Add breadcrumbs and bacon to green beans in skillet and stir to combine. Garnish with a squeeze of lemon juice if desired.

Refrigerate: store leftovers in an airtight container in the fridge up to 4 days.
📖 Variations
- Great additions to these beans would be diced red peppers, red onions, or toasted almonds.
- Substitute ½ small onion and 2 cloves garlic for the shallot.
- Top finished dish with ¼ cup crumbled feta cheese or goat cheese.
- Add ½ - 1 teaspoon crushed red pepper for a little bit of spice.

What bacon you suggest to use back or streaky bacon?

I would say streaky bacon is the closest to what I use here in the US, but you can use whatever you like.
