🥘 Ingredients
Fresh bell peppers, use your favorite peppers, I used red bell peppers and green bell peppers.
Lean ground beef
Ground pork
White rice, I recommend jasmine rice
Onion, I used and prefer the vidalia onion
Canned whole tomatoes, I used 1 quart of home canned tomatoes. 4 cups of canned diced tomatoes can be used instead.
Tomato paste
Italian seasoning
Garlic powder
Salt & Pepper
Monterey jack cheese
Fresh chives for garnish
🔪 Instructions
- Prepare the peppers by cutting the tops off and removing the core and seeds. Wash and dry the peppers and set aside.
- Heat 1 tablespoon olive oil in a large skillet over medium high heat until hot. Add the onions and cook for 3 minutes, stirring often, until onions soften.
- Add the ground pork and ground beef and cook, chopping meat into small pieces while cooking for 7 minutes, until meat is browned.
- Stir in the Italian seasoning, garlic powder, salt, and pepper. Add the tomatoes and tomato paste stirring to combine.
- Add the cooked rice and stir to incorporate.Using a spoon, fill each bell pepper with the meat mixture then place the stuffed pepper in the air fryer basket, leaving space between each pepper to allow hot air to circulate around the peppers. Cook at 400 degrees for 10 minutes.
- Remove the peppers from the air fryer and sprinkle cheese over each pepper.
- Return the air fryer basket to the air fryer and cook at 370 degrees for 2 minutes, until cheese is bubbly and begins to brown.
- Remove the air fryer basket and set aside to cool for 10 minutes. Using a long handled spatula, remove the peppers from the air fryer to serve.
- Garnish with chopped chives, if desired.

🥫Storage
Store leftovers in an airtight container in the fridge up to 4 days.
📖 Variations
- Use taco seasoning in place of the garlic, salt, pepper, and Italian seasoning.
- Use a combination of your favorite ground meats. Lean ground turkey, ground chicken, or Italian sausage are good choices.
- Substitute 4 cups cauliflower rice for the regular rice to make this a low carb keto recipe.
- Try different cheeses for topping, pepper jack cheese, cheddar cheese, or colby jack cheese all taste great with the peppers.
- Use brown rice in place of white rice.
💭 Tips
- Look for peppers that have 4 - 5 lobes on the bottom. These will be easier to stand up in the air fryer.
- If the tomato sauce mixture is still too runny, add another tablespoon of tomato paste

This recipe is perfect for the air fryer, but if you don't have one, bake them in the oven instead. Just preheat the oven to 350 degrees, stuff the peppers, place in a baking dish and bake for 20 minutes.
