Buffalo Chicken Burritos are an easy meal packed with buffalo sauce flavor wrapped in flour tortillas. This chicken burrito takes mexican food idea and combines it with the American love of buffalo chicken and makes a quick delicious lunch.

Shredded chicken
Hot sauce
Butter
Spanish rice
Monterey jack cheese
Blue cheese crumbles

🔪 Instructions
- In a large bowl, combine the shredded chicken, hot sauce, and melted butter until chicken is thoroughly coated.
- Lay 1 tortilla on a flat surface and two spoonfuls of the buffalo chicken mixture in center of each tortilla. Top with spanish rice, Monterey jack cheese, blue cheese crumbles and lettuce.
- Fold the side of tortilla closest to you up and over, packing the filling in. Fold each side of the tortilla up over the top of the first roll. Continue to roll tortilla to enclose filling, pushing sides of tortilla in to completely enclose filling.
- Cut burritos in half (if desired) and serve hot or cold.

- Substitute diced crunchy celery for the lettuce.
- Turn it into a buffalo chicken burrito bowl and combine the filling ingredients in a bowl eliminating the tortilla.
- Use shredded cheddar cheese or monterey jack cheese in place of pepper jack.
- Stir 1-2 tablespoons of ranch dressing or blue cheese dressing and 2 tablespoons green onions, sliced, into the chicken mixture.
- Use crumbled and cooked ground chicken in place of the shredded chicken.
- Substitute black beans for the rice.
- Stir 1 cup diced celery or red pepper into the chicken mixture.
💭 Top Tips
- Leftover chicken (or rotisserie chicken) is a great way to make this buffalo chicken burrito.
- Cook 2 large chicken breasts or 4 chicken thighs in a crock pot on low for 6-8 hours with ½ cup of chicken stock, salt and pepper to taste. When done, shred the chicken to use for this recipe.
- Warm tortillas for 20 seconds in the microwave to make folding the burritio easier.

Buffalo Chicken Burritos can be enjoyed several ways. Hot or cold and with a variations of fillings.
Spray the outside of the tortilla with cooking spray and after it has been wrapped, place burritos in a large skillet over medium-high heat for 2-3 minutes on each side, until browned. Or, place the burrito in the air fryer and cook at 400 degrees for 4-6 minutes, flipping the burrito over half way through.
I also like to skip the flour tortilla and rice entirely and make buffalo chicken burrito bowls for a low carb version. Or, use a low carb tortilla and eliminate the rice, using cauliflower rice instead if desired. When I do this I like to add extra salsa and guacamole to the bowl.

Ingredients
For the sandwich
- 6 flour tortillas
- 1½ cups spanish rice
- ½ cup monterey jack cheese , shredded
- ⅓ cup blue cheese crumbles
- 1½ cups shredded lettuce

To assemble the burrito
- Lay 1 tortilla on a flat surface and ⅓ cup buffalo chicken mixture in center of each tortilla.
- Top with ¼ cup spanish rice, and evenly distribute Monterey jack cheese, blue cheese crumbles and lettuce over top of chicken and rice.
- Fold the short side of tortilla closest to you up and over, packing the filling in. Fold each side of the tortilla up over the top of the first roll. Continue to roll tortilla to enclose filling, pushing sides of tortilla in to completely enclose filling.
- Cut burritos in half (if desired) and serve hot or cold.
