- Cook the pasta in a large pot according to package directions. Drain and set aside.
- While the pasta is cooking, heat a large skillet coated with cooking spray over medium-high heat, until hot. Cook the ground beef for 5 minutes, until browned.
- Stir the mustard, onion, and garlic powder into the ground beef and cook for 1 minute.
- Add the half and half and stir to combine, cooking for 1 minute, until beef mixture begins to bubble.
- Whisk in the sour cream and cheeses until cheese is melted. Stir in the low carb pasta until coated with sauce.

- Use any of your favorite low carb cheese to make the cheese sauce.
- Chop a head of cauliflower and steam it in the microwave for 7 minutes, until tender. Replace the pasta with the cauliflower.
💭 Tips
- Test the pasta as it cooks. Low carb pasta will have a firmer texture than regular pasta. You may need to cook it longer than the packaging states (I went over by about 3 minutes).

I wanted to keep this to true hamburger helper style and use pasta. I found a low carb pasta to test this recipe with and was very satisfied with the results and I prefer the pasta over the cauliflower in this keto cheeseburger helper.
If you want to use 4 cups chopped steamed cauliflower in place of the pasta, feel free to do so. However, the net carbs actually increase to 9 by doing this due to the fact that the pasta itself is very high in fiber.

- 8 ounces low carb elbow pasta
- ½ tablespoon chopped fresh parsley

- While the pasta is cooking, heat a large skillet coated with cooking spray over medium-high heat, until hot. Cook the ground beef for 7 minutes, until browned.
- Stir the mustard, onion, and garlic powder into the ground beef and cook for 3 minute.
- Add the cream cheese and half and half and stir to combine, simmer for 5 minutes, until beef mixture reduces some.
- Whisk in the cheeses until melted. Stir in the low carb pasta until coated with sauce.
- Serve garnished with chopped fresh parsley if using.
