Chicken tenderloins: these will cook quicker than breasts or dark meat and be tender and easy to pull apart.
Bouillon cube: I like to cook my chicken tenders in chicken broth to intensify the flavor.
Barbecue sauce: I love Sweet Baby Ray's!
Rice wine vinegar: adds a little tang to the sauce ingredients.
Gochujang sauce: this is a spicy sweet Korean chili paste. It adds a ton of flavor and a tiny bit of heat.
Honey: for an slight touch more sweetness and flavor
Slider rolls: I love the King's Hawaiian buns or a nice soft brioche bun.
🔪 Instructions
- In a medium saucepan, place chicken tenderloins, black pepper, and bouillon cube with enough water to cover the chicken.
- Bring the chicken mixture to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and drain broth from the chicken. Discard broth (or save for another use like gravy!)
- While chicken is cooking, measure sauce ingredients and place in a mixing bowl.
- Immediately after removing chicken from the saucepan shred chicken using two forks to pull the meat apart.
- Place the shredded chicken in the bbq sauce mixture and toss to coat. If needed, use the microwave to reheat chicken before assembling sandwiches.
- This recipe makes 12 slider sandwiches or 6 regular sandwiches using hamburger buns.

- Apple cider vinegar can be substituted for the rice vinegar

- Make these into lettuce wraps! Eliminate the buns and serve in the center of a romaine lettuce leaf.

- To ensure tender chicken, be sure to simmer, not boil the chicken. Because these are tenderloins, they will cook quickly and a slow simmer will make them tender.
- If you want to skip cooking the chicken entirely, just use a rotisserie chicken purchased from the store.
