Chicken breasts Cooked rice Cream of chicken soup Chopped broccoli Diced onion Chopped mushrooms Sour cream Cheddar cheese Chicken broth

Saute seasoned diced chicken pieces in olive oil until chicken is almost cooked. Alternatively you can skip this step and use leftover rotisserie chicken instead.

Add the onions and mushrooms and cook over medium heat until vegetables are softened. If using rotisserie chicken, start with this step to cook mushrooms and onions then add cooked chicken.

Mix the broccoli, cooked rice, canned soup, sour cream, cheddar cheese, and chicken broth (if using) into the chicken mixture and stir to combined.

Transfer chicken, broccoli, rice mixture into a 9 x 13 baking dish coated lightly with  cooking spray and spread mixture into dish evenly.

Sprinkle top of casserole evenly with crushed buttery round crackers. Alternatively you can use crushed cornflakes, seasoned bread crumbs, or panko.

Bake for 35 minutes in a 350 degree F oven, until casserole is bubbly and cracker topping is golden brown.
