🥘 Ingredients
Lean ground beef: good choice here is 85/15 or 90/10 ratio.
Dill pickles: these add a special flavor that is very delicious, however, if you don't like pickles, you can leave them out.
Pickle Juice: just use the pickle juice straight from the pickle jar. If you prefer to leave the pickl out, you can substitute with low-fat milk.
Light bread:: torn into small pieces to form soft bread crumbs. Choose a bread that has 45 calories per slice.
Reduced fat cheese: good options are Mexican blend, part skim mozzarella, reduced fat cheddar.
Brown sugar substitute: this is optional and can be used if you like the sweeter toppings on meatloaf.

🔪 Instructions
- Pre heat oven to 350 degrees F. Spray muffin tin with non-stick cooking spray.
- In a large bowl, combine meat, pickles, pickle juice, onion, bread, egg, and cheese until well combined.
- Fill muffin tin with ½ cup of meat mixture and press down into prepared muffin tin to pack well.
- In a small bowl, combine the ketchup, mustard, brown sugar substitute (if using) and worcestershire sauce. Evenly spoon ketchup mixture over top of the meatloaf mixture and top of the meatloaf muffins with bacon pieces.
- Place muffin tin in oven and bake 30 minutes in preheated oven, until internal temperature of meat is 160 degrees.

Muffin tin: use a tin with regular-size muffin cups.

Refrigerate: store leftover meatloaf in an airtight container up to 5 days.
Freeze: store in an airtight freezer safe container up to 3 months.
Reheat: warm thawed meat loaf muffins in the air fryer or oven at 350 degrees for 5-7 minutes, or in the microwave until warmed through.
📖 Variations
- Use leftover meatloaf the next day to make the best meatloaf sandwich! Spread a little bit of mayonnaise on bread and add leftover meatloaf. Make it extra special and top with french fried onions and more bacon.
- Substitute bacon bits for the bacon slices.
- Substitute mozzarella or provolone cheese
- Use a sugar free bbq sauce in place of the ketchup topping.
- Substitute 1 teaspoon onion powder for the raw onion.
- Ground turkey or ground chicken can be used in place of the ground beef.
💭 Tips
- No muffin pan? Make these into individual mini meatloaves. Just line a rimmed baking sheet with aluminum foil, shape into 9 equal sized pieces and top with ketchup topping and bacon. Bake as instructed.
- Want to make a traditional meatloaf instead of meatloaf muffins? Place meat mixture in a loaf pan and top with ketchup topping and bacon. Bake in oven as directed for 40-45 minutes, until internal temperature of meat loaf registers
- Substitute turkey bacon or vegetarian bacon for a lower fat count.
