Crispy Boneless Wings on Keto
One of my favorite things to enjoy when going out to eat would be either bone in or boneless chicken wings. Once I went low carb, the only option I had when eating out anymore was bone in wings. Then you had to be careful with the sauce and make sure it had no hidden sugars.
I started using the air fryer to make chicken wings because I loved how crispy they turned out but I still missed my boneless wings. I solved that problem when I was enjoying a snack of spicy pork rinds and started to think how delicious they would be on the chicken tender!

Air Fry or Oven Bake
The great thing about this recipe is if you don't own an air fryer, you can still make it. These can be air fried, baked, and even shallow fried in a skillet.
To cook in the oven, just preheat to 400 degrees. Cook for 20 minutes, flipping over after 10 minutes.
If using a skillet, add some olive oil to a hot skillet and place the chicken in the skillet and fry over medium heat for 3-5 minutes, then flip and cook for another 3-5 minutes. Test with a meat thermometer to be sure they are cooked. It should reach at least 165 degrees internal temp.

Spicy Pork Rinds, I buy them already crushed.

Air Fryer, this one is excellent. It has removable trays, a french fry basket, and rotisserie!
🔪 Instructions
- Using a pair of tongs, place the egg in a large bowl and whisk until foamy. Place crushed pork rinds in a separate bowl. Dip chicken tenders in egg wash. Turn to coat.
- Transfer the chicken to the ground pork rinds. Turn to coat.
- Place the pork rind coated chicken tender on the air fryer rack. Repeat with remaining chicken tenders. Air fryer for 25 minutes at 400°, turning over half way thru cooking.
💭 Top Tips
- If grinding the pork rinds yourself, this little blender is the bomb! It pulverizes the pork rinds in seconds.
- Save money by buying whole chicken breasts, then cut them into strips to make the tenders.
- Serve these with this homemade ranch dressing, or chipotle salad dressing as a dip.
📖 Variations
- Try other flavored pork rinds for the breading. There are honey mustard, BBQ, and nacho cheddar.
- Use plain pork rinds and mix your own seasoning in. I like to this homemade taco seasoning.
