This is not your typical tortilla soup recipe as I skipped the black beans to make this recipe as low carb as possible I used the ingredients below, substituting mushrooms for the beans. You could use chopped cauliflower if you don't like mushrooms.
Ghee: this is clarified butter, where the milk solids have been removed.
Carrots
Cumin
Fresh limes
Rao's Homemade Marinara sauce
Raw medium shrimp
🔪 Instructions
- In a large soup pot over medium-high heat, melt ghee.
- Add onion, celery, carrots, and mushrooms to ghee and cook 5 minutes, until vegetables are translucent and mushrooms have released their water.
- Sprinkle veggie mixture with cumin, chili, chipotle, and garlic powder and stir to combine.
- Add chicken broth and Rao's Homemade Marinara Sauce to vegetables. Cover and let simmer about 5 minutes over medium heat.
- Add raw shrimp and lime juice. Stir to combine. Cover soup pot and simmer 5-7 minutes, until shrimp are no longer opaque.
- Serve hot with desired toppings.
