Large raw shrimp works best for this recipe, although you can use jumbo shrimp as well.
Coconut flour, you only will "dust" to prep the shrimp for the egg wash.
Coconut milk, be sure to use full fat, added for flavor and fat.
Black pepper, garlic and onion powder to season the flour mixture.
Unsweetened shredded coconut flakes
Cooking spray, to spray the inside of the air fryer basket and the top of the shrimp.
Full fat greek yogurt
Pineapple and Coconut skinny syrup, this is a sugar free brand. You can either buy it on amazon or at the company website.

🔪 Instructions
- Using a hand whisk or blender, whisk the eggs and coconut milk until well incorporated. If using a blender, transfer to a small bowl.
- In a separate shallow bowl whisk together the coconut flour, garlic powder, and onion powder.
- In a third bowl, add the unsweetened coconut flakes
- Dip a piece of shrimp in the coconut flour mixture, then into the egg mixture and lastly the coconut flakes. Lightly press into coconut flakes to adhere to the egg wash. Repeat with remaining shrimp.
- Spray inside of air fryer basket with cooking spray. Place shrimp in a single layer, leaving space between the shrimp to allow air to circulate.
- Cook at 400 degrees f for 7 minutes, turning shrimp over halfway through cooking.

Store leftovers in an airtight container in the fridge for up to 4 days or in the freezer up to 3 months.
To reheat shrimp, place in an air fryer on the reheat setting (or 350 degrees) for 3-4 minutes.
📖 Variations
- Stir ½ cup coarsely ground pork rinds into the coconut mixture for extra crispy coconut shrimp
- Almond flour can be substituted for coconut flour.
💭 Tips
- Unsweetened coconut can have long strands. To make it easier to adhere to the shrimp, Place it in a mini blender or food chopper and pulse it a few times to break it down. Don't pulse too much or you will have coconut dust.
- To toast the coconut for the sauce, place 2 tablespoons unsweetened coconut flakes in the air fryer at 400 degrees. Cook for 2 minutes, shaking periodically, until golden brown.
- Bread all of the shrimp before cooking any of it. As each piece is breaded, place it on a large baking sheet until ready to add to the air fryer.

I love the pina colada dipping sauce from Red Lobster, and the yogurt sauce recipe that I share with this coconut shrimp is so close to it!
When testing this recipe I used the oven method as well as the air fryer method. Of the two ways, the air fryer method was the best way to cook it. It worked faster and made the coating a crispy golden brown.
When using the oven method, the coconut coating did not crisp up and the shrimp were cooked way before the coating was golden. I highly recommend air frying over the oven method.
Deep frying is an option and the end result is delicious crispy golden shrimp. Heat the oil in a deep fryer until it is 350 degrees. Place shrimp in the hot oil and cook for 2-3 minutes, until golden. Transfer to a paper towel lined plate and drain excess oil before serving.
