So, let me get this out there first. Bananas are a fruit. They are on the higher end of the carb/sugar spectrum. There is nothing wrong with eating a banana, no matter what diet you follow. It is all in how you eat it.

Keto Banana Bread with Chocolate Chips

Ingredients
- 2 ripe bananas
- 3 large eggs room temperature
- 6 drops cinnamon flavor
- 2 tablespoon butter or coconut oil melted
- 1 cup almond flour
- ¼ cup coconut flour
- ¼ cup sugar-free chocolate chips
- ½ cup classic monkfruit
- 1 teaspoon baking powder
- ½ teaspoon salt
Instructions
- Preheat oven to 350 degrees
- Line a loaf pan with parchment paper and spray with coconut oil cooking spray.
- Mash the bananas in a small mixing bowl. Add the eggs, cinnamon flavor drops, and melted butter. Whisk until thoroughly combined.
- In a large mixing bowl, whisk the almond flour, coconut flour, erythritol, baking powder, and salt until combined.
- Stir the banana mixture into the flour mixture until combined. Transfer the banana bread batter into the prepared loaf pan.
- Bake for 40 minutes or until a toothpick inserted comes out clean. Cool completely and frost with Peanut Butter Frosting if desired.
