🥘 Ingredients
Cream cheese: the base ingredient in the truffle
Powdered sugar: used to sweeten the truffles as well as mix with the cocoa powder to coat the truffle.
Cocoa Powder: use a cocoa powder like Hershey's.
Mint chocolate chips: I like to use semi sweet mint chocolate chips. If you can't find peppermint flavored chocolate chips, you can add ½ teaspoon peppermint extract (made with peppermint oil) to the chocolate when it is melted.
🔪 Instructions
- Line a 8×8 baking dish with parchment paper.
- Place chocolate chips in a large microwave-safe bowl. Place in microwave and heat on high for 30 seconds. Remove chocolate from the microwave and stir. Return in 30 second intervals until chocolate is melted, stirring in between each interval.
- Add softened cream cheese to the melted chocolate and mix with an electric mixer on medium speed until smooth.
- Stir in 3 ½ cups powdered sugar and mix until well blended.
- Turn truffle mixture into prepared baking dish and press into a square. Cover with plastic wrap and place in the refrigerator to chill up to one hour.
- Remove chocolate mixture from refrigerator. Cut into squares 48 small pieces and roll into ball shape. Coat each truffle with cocoa powder, powdered sugar, or sprinkles.
- Store in refrigerator in an airtight container. Remove from fridge at least 10 minutes to bring to room temperature prior to serving.

Refrigerate: Store chocolate truffles in an airtight container in the fridge up to 2 weeks.
📖 Variations
- Roll truffles in crushed candy canes to make peppermint chocolate truffles.
- Omit the cocoa powder coating and dip truffles in melted chocolate for a hard chocolate shell layer then sprinkle with colored sprinkles on top of each truffle.
- Use your favorite flavor combination, ie: peanut butter chips, dark chocolate chips, vanilla chips, or andes mints etc.
💭 Tips
- Truffle mixture should be fairly stiff and almost hold it's shape before refrigeration. Chilling the mixture enables the chocolate to be handled easier without melting in your hands. Be sure to chill at least 10 minutes (or longer).
- Easily lift the truffle mixture out of the dish before cutting the truffles into squares. This will allow for easier and even cutting of the chocolate.
- To make 48 truffles, score the chocolate in half, then cut each half into quarters. This will give you 8 even rows. To make squares, turn the truffles ¼ of a turn and then score into thirds. Cut each third in half for 6 even rows.
