🍽️ Meal Planning and Prep Tips
I'm here to share with you recipes to make during the week that aren't hard to make and take little prep. Most feed 4 so if there are just 1 or 2 to feed, you may want to scale down and halve a recipe OR just make a couple of these and enjoy leftovers throughout the week.
Most of my recipes are easy to make in a short prep time, however I do have some tips to help you with this week's menu!

Skillet Cod with Cilantro Lime Butter
I have been making this pan-seared cod recipe for years now. It is naturally low carb and absolutely delicious! Serve with a side of Mexican Street Corn Salad or your favorite green side salad.
February 1
Russian Mushroom Potato Soup
Make it a soup and sandwich night with this mushroom potato soup and Air Fryer Grilled Cheese Sandwich.

Air Fryer Rotisserie Chicken
I love making this Air Fryer Rotisserie Chicken! It is so moist and delicious and I usually have leftovers for a second night (see Friday night dinner!) Serve this with this unique and delicious Creamy Parmesan Pasta Salad.

Chicken Enchilada Casserole
Make this low carb chicken enchilada casserole with the leftover chicken from Thursday night. Serve it with a dollop of sour cream and this homemade guacamole.
