– ¾ cup oil – 1 cup sugar – 2 leggs – ½ teaspoon cinnamon – 1 teaspoon vanilla – ½ cup buttermilk – 2 cups flour – 2 cups regular oats – 2 tsp baking powder – pinch salt
Whisk wet ingredients separately from dry ingredients. Then it is as simple as mixing the two together to make the cookie dough.
Add oatmeal, raisins, and walnuts (if using) and stir to combine. Oats can be whole oats or quick oats, whatever you have on hand.
This produces a cookie dough that is a little looser than normal, but don't worry, it holds up well.
Using a medium cookie scoop, place oatmeal cookie dough out onto parchment lined baking sheet. Bake at 350 for 17 minutes.
When cookies are golden around the edges and no longer wet on top, they are ready to come out of the oven.
The end result is a soft oatmeal cookie with a hint of cinnamon and studded with raisins with a soft tender crumb
