One of my favorite desserts is the cream puff. I remember watching my mom making them and being so excited for them to be done. I would love to peek in the oven while they were baking to watch them magically puff up. When they came out of the oven they would have this crisp exterior. Once slightly cooled we would cut the tops off and remove the soft dough from inside to make room for the filling. We would put that soft dough in a separate bowl while preparing the cream puffs and as a treat mom would let us eat that dough with a little of the pastry cream she had made for the filling or sometimes just sprinkle a little bit of sugar on it. Mom making cream puffs was a special event and not something she did on a regular basis. That is why when I think of celebrations, I think of making the items my Mom or Nanny would make for us on special occasions. Hence, I bring you these Chocolate Strawberry Cream Puff Bites to share for a Labor Day celebration!

These Chocolate Strawberry Cream Puff Bites are the perfect recipe for a Labor Day Celebration. Made into bite sized chocolate puffs these totally work with the Cafe Zinfandel for a pairing. Many Labor Day celebrations include a parade, some celebrate at home or at a friends home, many Americans take that long weekend and visit a campground as the last hurrah to summer and to celebrate the American Labor Movement.
Celebration in the outdoors can cause problems for desserts like this, especially if we are having an Indian summer with the temperatures still 80 or above and high humidity! The thin layer of cocoa almond spread provides a solution to a soggy dough. Besides protecting the dough from becoming soggy, it also adds just enough sweetness to this dessert without making it too sweet. The chocolate cream puff itself is savory, with no sugar in the dough. The only sugar you come across is what is in the spread you put inside the dough. There was no need for me to do anything with the strawberries other than chop them and place them on top of the spread inside of the cream puff.
This year for Labor Day I'm not sure what we will be doing. A lot of things depend on where Grumpy's working at the time and whether he has he energy to do anything in particular other than relax at home. However I do miss getting together with my family at this time of year. Now that we live so far away from everyone it is tough to go to gatherings on holidays. I have many great memories of Labor Day celebrations at my Aunt Marlene and Uncle Gary's home. Uncle Gary would host a turkey deep fry, where they also would deep fry fresh caught fish and french fries. There would be salads and desserts along with beverages for everyone to enjoy. As a matter of fact, this photo of Nanny and me was taken on a Labor Day event at my Aunt and Uncle's home! I love this photo of the two of us. It is a pretty old photo and I realize we are wearing sweater and jacket here on Labor Day. It's hard to believe we needed them but apparently we did! This was right about the time I met Grumpy so it was about 15 years ago. Hard to believe how quickly time flies!
Oh the deliciousness I miss from those days of our family gatherings! If I were able to go this year I would be grabbing a bottle of Gallo Family Vineyards Cafe Zinfandel and Sweet White Blend Wine then pack up a couple batches of these yummy Strawberry Cream Puff Bites! - 1 cup water
- ½ cup unsalted butter
- ½ teaspoon salt
- 1 cup all-purpose flour
- 2 tablespoons cocoa powder
- 4 large eggs
- ½ cup cocoa almond or hazelnut spread
- 2 cups chopped strawberries
- whole strawberries for garnish (optional)
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
- In a medium sized saucepan combine 1 cup of water, ½ cup butter and salt. Over medium heat, bring water mixture to a rolling boil. Using a wooden spoon, beat in flour and cocoa being sure to stir constantly. When mixture begins to form a ball, remove from heat and let cool for 5 minutes.
- Once cool, beat in eggs, one at a time until mixture is smooth.
- Pipe dough into 24 mounds onto prepared baking sheet. Bake for 30-35 minutes or until puffed and golden brown. Cool completely before filling.
- To prepare: Cute top portion of cream puff in half horizontally. Remove soft dough from inside. Discard in the trash or your tummy! Spoon spread into bottoms of cream puff and top with strawberries. Place top of puff over strawberries. Garnish with strawberries.
