- Pre heat oven to 350 degrees F.
- Line 8-inch square baking pan with foil, allowing excess foil to hang over sides of the pan. Lightly spray foil with nonstick cooking spray. Set aside
- Combine flour, baking powder and salt in a small mixing bowl. Set aside.
- Microwave butter and chocolate in a microwave safe bowl, stirring occasionally, until smooth, about 1 minute. Set aside to cool slightly, 2-3 minutes.
- In a large mixing bowl, using a hand whisk, mix eggs and sugar until well combined.
- Add chocolate mixture and vanilla extract and mix until well combined.
- Using a wooden spoon, gradually stir in dry ingredients until just incorporated. Do not over mix.
- Measure 1 cup of brownie batter and set aside.
- Pour remaining batter into prepared baking pan, arrange peppermint patties on top of batter, spacing ½ inch apart. Smooth remaining batter over candy.
- Bake 30 minutes, until just set in the center and a few moist crumbs stick to a toothpick when inserted into the brownie.
- Cool completely on a wire rack. Using foil overhang, lift brownies out of pan and cut into uniform squares.
