🥘 Ingredients
Peanut butter: use a regular peanut butter, I like to use Peter Pan or Jif creamy peanut butter cut you can also use crunchy peanut butter if desired.
Light brown sugar: I do prefer to use Dominos brown sugar, but store brand works here also.
Large egg: the egg works as a binder in the recipe and aids in the cookie puffing up. It works with the sugar making the crispy edges and soft center.
Vanilla extract: enhances the cookies flavor.
Ground cinnamon: this is an optional ingredient and enhances the flavor of the cookie.
White sugar: optional, to press into top of cookie with fork tines
🔪 Instructions
- Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
- In a large bowl, using a hand mixer on medium speed, combine the peanut butter, brown sugar, egg, and vanilla until peanut butter mixture forms a stiff dough forms.
- Scoop dough with a small cookie scoop and roll into a ball.
- Place cookie dough balls on prepared cookie sheet. Press the back tines of a fork onto the top of the cookies about half way through. Dip fork into granulated sugar (if desired) then press in a crisscross pattern. Dip the tines the fork into sugar between each press.
- Bake for 8 minutes, or until cookies are golden brown around the edges and have set in the center.
- Remove from oven and place cookies on a cooling rack until completely cooled.

Large mixing bowl: you want a bowl with tall sides to prevent spatter when mixing the dough
Electric mixer: to easily combine the ingredients. A wooden spoon can be used in its place but it will take longer doing so.
Large baking sheet: I like to use a rimless, insulated baking sheet
Rubber scraper: to scrape down the sides of the bowl during mixing
Parchment paper: to line the baking sheet and prevent sticking
Fork: used to create the criss cross pattern on top of the cookies
Small bowl (optional): to hold the granulated sugar (if using)
Cookie spatula: to move the baked cookies from the baking sheet to the cooling rack
Wire rack: for cooling the cookies

Room temperature: store cookies in an airtight container at room temperature up to 5 days
Freeze: store in a freezer-safe airtight container up to 3 months
📖 Variations
- Stir in 1 cup of miniature chocolate chips
- Use caramel extract in place of vanilla extract
- Make these low carb and sugar-free by substituting a sugar free brown sugar (such as Swerve brown sugar)
