Dark chocolate and fleur de sel tops of these buttery Honey Popcorn Ball Bites. Slightly chewy in texture and not too sweet, these are a perfect fall treat and it is my last contribution to #Choctoberfest!
If you haven't entered the #Choctoberfest Giveaway yet, this is your last chance to do so HERE!
I saved Nature Nate's product for last. Mostly because this is a very heart wrenching topic for me and such a very special post. With October being breast cancer awareness month, a few bloggers are sharing with you their connection to breast cancer awareness as well as joining their initiative to bring awareness at Honey Gives Hope.
I had never had Nature Nate's honey before I was selected to be in this group to share with you for Choctoberfest. When I received the package, I immediately broke it open to give it a try and was very impressed! In reading about their product, I found that they test every batch of their honey for pollen count as well a clean read for pesticides, antibiotics, and corn and rice syrup adulteration. You can find out more about their honey process on their website!
Breast Cancer Awareness is very important to me. Back in the 70's, when I was just 13, my Dad's sister was diagnosed with breast cancer. For a 13 year old to hear that, it was a very scary thing. My Aunt Bonnie passed away in 1983, less than 10 years after her diagnosis. It is in her memory that I am writing this post and encouraging you to join in with Nature Nate's #HoneyForHope Initiative.
This is the only photo of my Aunt that I have access to, and thank you to my Aunt Iris, one of dad's other sisters for providing me with this photo to share with you today. I hope you will join in the initative with us and be sure to check out Nature Nate's video
I also highly recommend you give this popcorn ball recipe a try! They have a delicious flavor from the honey butter and they are nice and chewy in texture!
I am looking forward to giving Grumpy's Honey Walnut Shrimp a try with this honey soon!
I want to thank Allison over at the PinterTest Kitchen for hosting the #Choctoberfest event. She has been our fearless leader and puts a lot of work into making this event happen. Please be sure to stop over check out her website!
- ⅔ cup unpopped popcorn kernels
- ½ cup butter
- 1-½ cup honey
- 1 teaspoon vanilla
- 2 ounces dark chocolate, melted
- fleur de sel
- Preheat oven to 325°. Put popcorn in a large roasting pan. Line a large baking sheet with waxed paper.
- In a medium saucepan over medium heat, using a wooden spoon, stir together butter, honey, and salt until butter is melted. Increase heat and bring to a low boil. Boil honey mixture gently for 1 minute, stirring constantly. Stir in vanilla.
- Carefully pour honey mixture over popcorn in roasting pan and stir to coat. Bake popcorn, stirring every 5 minutes, until deep golden all over, about 20 minutes.
- Let popcorn stand 5 minutes until it is cool enough to handle. Working quickly with lightly buttered hands, press small handfuls of the mixture into 1 ½-in. balls, If mixture starts to harden too quickly while shaping balls, return it to oven for about 45 seconds to soften.
- Let popcorn balls cool completely. Drizzle with melted dark chocolate and sprinkle with fleur de sel.
- Store in an airtight container at room temperature for up to 2 weeks.
