🔪 Instructions
- Preheat oven to 350 degrees. Spray two 9x12 loaf pans with cooking spray and set aside.
- In a large bowl, using a hand mixer at medium speed, mix butter, sugar, and 1 tablespoon of lime zest until fluffy.
- Add eggs, one at a time, beating well after each addition.
- In a medium bowl, stir together the flour, baking powder, and salt.
- Gradually add flour mixture to butter mixture, stirring until combined.
- Using a wooden spoon, fold in Greek yogurt and cherries. Divide batter between prepared pans.
- Bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
- Let cake cool in pans on a wire rack for 10 minutes. Remove pound cake from pans and cool completely.
- Once cakes are cooled, in a small bowl, mix together the confectioner’s sugar, lime juice and 1 tablespoon lime zest. Drizzle onto cakes prior to serving.

📖 Variations
- Substitute maraschino cherries for the fresh cherries. You can also substitute blueberries, blackberries, raspberries or strawberries.
- Add a teaspoon of almond extract to enhance the flavor of the cherries in the pound cake.

- Be sure to cream the butter, sugar, and eggs well. This beats air into the batter, increasing volume and texture.

I don't have any 9 x 12 loaf pans. The largest I have are the 5 x 9. Would that make 3 loaves instead of the 2 you mention? I'm also assuming that the baking time would be less with the smaller loaves.
