Lemon cake mix: you will need a 15.25 ounce box of cake mix.

Prepare cookie dough
- To a large mixing bowl, combine cake mix, eggs, and vegetable oil. Using an electric hand mixer on medium speed, blend together until ingredients are smooth.
- Add white chocolate chips and mix well.
- Cover mixing bowl with plastic wrap and place the dough inside the refrigerator. Chill for 30 minutes.
Bake the cookies
- Preheat oven to 350 degrees F. Line baking sheet with parchment paper. Add powdered sugar to a shallow small bowl.
- Using a ¼ cup sized measure, scoop cookie dough from the bowl . Roll dough between the palms of your hands, forming round, smooth, cookie dough balls.
- Add the dough ball to the prepared bowl of powdered sugar, covering the dough fully. Place cookie dough balls on parchment lined baking sheet 2 inches apart. Repeat for each cookie.

📖 Variations
- If you love all things lemon, add lemon zest or lemon extract to the cookies to really amp up that lemon flavor and instead of white chocolate use a lemon flavored chip!
- Make a lemon glaze with powdered sugar and fresh lemon juice. Drizzle the top of the cookies with the glaze.
- Use a white cake mix and any flavor chip you desire!
💭 Tips
- When mixing the cookies, be sure to use a rubber scraper to scrape down the sides of the bowl and incorporate all of the cake mix.
- For best results, allow the cookies to cool for 2-3 minutes on the baking sheet before transferring to the cooling rack.
- Note that the cookies will shrink in size and become firmer as they cool.
