- Substitute 1 cup crushed freeze-dried strawberry for fresh strawberries
- Substitute 2 egg whites for the large egg to reduce fat more.

The last word
When developing this recipe I took the concept of a muffin made with breakfast cereal and turned it into a baked donut. I used the same method of soaking cereal in milk and added fresh strawberries to the batter. The cereal crunch top is for added texture and the glaze made with pureed strawberries intensifies the flavor of the muffin.
