This is day 3 of a round up of recipes sent in for the brunch/breakfast contest being held with my newsletter readers. Today's recipe is from Nan of Nan Cooks. Nan sent in a recipe for Gem Muffins - a recipe that was from her freshman home economics class back in the 70's :o) I loved the 70's....I was a 70's girl too!

Mix dry ingredients. Mix egg, oil, milk, pineapple. Mix together to moisten. Spoon into muffin cups ½ full. Top each with a teaspoon preserves. Bake at 400 degrees for 20-25 minutes.
