I have been wanting to make some homemade granola for a few days now. I love to eat it on my yogurt for breakfast! I had made Foster's Homemade Granola before and while it was good, I wanted to find a different recipe this time.
I happened to come across the blog My Adventures in Food (blog no longer exists) on Sunday afternoon and while browsing through her posts I came across a granola recipe. I didn't have coconut, but figured I would just have to make the recipe without it this time as I was not going to the store 13 miles away just for one ingredient. I did some improvising and what I did is below.
Granola
3 cups whole oats
¼ cup plus 2 Tbsp. brown sugar (I only had dark brown)
¼ cup plus 2 Tbsp. pure maple syrup (I use light amber)
½ cup canola oil
¾ cup shredded coconut
1 cup whole sea salted cashews
½ cup roasted sunflower seeds
½ cup slivered almonds
½ cup kettle roasted peanuts
1-½ cups raisins (I used dried assorted fruit - strawberries, cranberries, prunes, raisins, etc)

I make my own granola too. Last week I tried Tyler Florence's and it was really delicious. Yours looks good, and unusual with those cashews.

Granola and yogurt are my favorite snack! My best tip is to eat lots of fruit before lunch...you'll be amazed at how good you feel!

I think the best nutritional tip is to write down everything you eat. If you bite it, write it. It helps you see where your diet is lacking in nutrients.

Cashews are my favorite nuts! Whenever I visit my parents in Seattle, my mom buys a big container of mixed nuts from Costco and I tend to pick out all cashews 😉

My healthtip is to drink plenty of water, and get plenty of calcium and eat green leafy vegetables.

I thought I didn't like yogurt for a long time.... but then I tried it. LOL
of course I like it..it tastes good. I usally put grape nuts with mine, but now I'll have to try granola. I'm walking...walking..walking lately. Silly me, I TOLD everyone I was going to do the Cancer-walk, and now I have to train for it, so I can really do it. I've actaully enjoyed it, I just wish it would warm up.
