Here is everything you need to make this creamy, delicious breakfast!
- Milk: I used whole milk for this recipe, however non-dairy milks can be used in it's place.
- Old-fashioned oats: these work best as they lend some chew to the oatmeal. These are also known as rolled oats,
- Pumpkin puree, be sure to buy the can that says puree, not pie filling. Or, make your own homemade pumpkin puree.
- Brown sugar: light or dark will work. I prefer the dark brown sugar for a deeper flavor.
- Pumpkin pie spice: to add the warm fall flavors to the oatmeal.
- Vanilla extract: compliments the flavors
- Chia seeds: add fiber and healthy fats to the oats.
- Pecans: chopped

- In a pint sized mason jar, add the oatmeal, milk, pumpkin puree, brown sugar, pumpkin pie spice, vanilla extract, chia seeds, and pecans.
- Using a tablespoon, stir the ingredients until well combined.
- Place the pumpkin oats in the refrigerator for at least 4 hours or overnight.
- Enjoy cold or warmed up with a little whipped cream, pumpkin spice, and pecans for garnish.

- Substitute pure maple syrup or honey for the brown sugar
- Use a oat milk, cashew milk, or unsweetened almond milk in place of cow's milk for a vegan, dairy-free breakfast
- I recommend whole rolled oats, but quick oats can be used in a pinch.
